Which Italian Meals Can You Cook?

HI guys, which italian meals can you cook? By myself I can cook of course all types of pasta: spaghetti, maccaroni, etc.. and also sauces like pesto and ragu. Another one is the "risotto allo zafferano" wihch is really tasty especially in summer as it's really light as meal. What about you?
 
Well, I'm not much of a cook to be honest, and while I can make a few dishes, not just Italian but from around the world, I definitely wouldn't say that I can make anything to be proud of.

When it comes to the Italian dishes, obviously the basics llike spaghetti bolognese, or with meatballs, lasagne and a few other pasta bake dishes but that's about it I'm afraid.

Although I would like to add the dishes I've mentioned I make from scratch, no ready meals involved so at least that's something!

I'm not a cook either. I like to cook and I enjoy it, but I'm definitely not great when it comes to variety. I can cook the basic Italian things like you mentioned as well, and a few other vegetarian Italian recipes. When I eat at home though, I barely ever eat ready meals. However simple, I do cook something. I like knowing exactly what I'm eating.

The saying is practice makes perfect but I think in my case that doesn't apply, as I've been cooking, or should I say experimenting for a number of years, and while it's edible, I won't be getting a Michelin star anytime soon!
 
I love to cook and also really like Mediterranean kitchen such and Italian cuisine, i think i inherited this from my father :). My absolute favourites are the various pasta sauces, with tomato or white sauce, eggplant and so. I can make pesto too! But not with pine nuts because its quite pricey here, but with almond or simple nut.
 
I'm English but I lived in New York for a few years and worked with a lovely girl called Mary-Lou who was from a Sicilian family. She shared her mom's lasagne recipe with me and I've been making it ever since. The secret is to cook three or four raw Italian garlic sausages into the meat sauce. I use a hand blender after cooking to break it down into a smooth sauce.

I can make most of the traditional pasta dishes, risotto and pizza. I have yet to make my own pasta though and I would love to make my own ravioli and tortellini one day. I'm quite good at making sauces which I use less butter and milk and use soy milk instead so cream sauces are less heavy and i use more olive oil in tomato based sauces so they are less acidic.
 
I make quite a few things since my Nonna was born in Italy so Italian food is in my blood. Plenty of pasta sauces, risotto, lasagne...the only thing I'm not really proficient at is making gnocchi from scratch. For some reason it always turns out gluggy and not quite right! Hopefully I'll get it right eventually - after all, practice makes perfect, right?
