Tomato Sauce

When my mother-in-law makes her tomato sauce for pasta she makes it with tomatoes from her garden. We can them in September for the winter months. She makes her sauce with pieces of beef, garlic and onion. She will add crushed tomatoes and bring it to a boil. She then lowers the heat and the sauce slow cooks for 2 to 3 hours. She says the key is to leave the sauce on a slow simmer for a long period of time.
 
I feel really hungry after reading about this sauce. Does your mother-in-law use minced beef? I know that meat sauce tastes better the next day, but have never tried to cook it for hours at a time before.
