Pickled Eggplants In Oil

On of my favorite things is pickled eggplants marinated in oil. They are thin little strings of eggplant, that have a bite to them, and a little zing. They come sold in jars, and can either be spicy or plain. You can serve them as past of an antipasto platter.

Have you tried these eggplants? Would anyone by chance know how to make these at home?
 
I haven't even heard of pickled eggplant before! I'm not sure if it sounds gross or delicious, haha. It sounds interesting at the very least though, and I'd probably try it if it was ever offered.

Also, pickling things generally just means sticking it into a jar and leaving it for a while. I've pickled cucumbers before to make pickles, and it was generally just putting sliced up cucumbers in a jar full of "brine" (usually vinegar, water and salt) that has been made previously and leaving it in the fridge for like, a couple days?

I haven’t heard of many other people liking this! My aunt makes this all the time and I love it. It tastes so good on toast. It is more of a treat then an actual meal. I want to learn how to make it.
 
Well I have to admit I've never heard of pickled eggplant before either to be honest and I'm not sure I'll 've trying it any time soon either.

While I will give most foods a go, this doesn't sound appealing to me at all but each to their own, as they say so if you enjoy it that's all that matters!
