Pasta Al'arrabiata

I love spicy food and thought I'd share this one with you. Please share with us any variations to the recipe.

Ingredients:

  • 6 tablespoons extra virgin olive oil, plus an extra dash for cooking the pasta
  • 2 medium hot chillies, finely sliced (adjust to taste)
  • 2 garlic cloves, chopped
  • handful of fresh basil leaves
  • 600g canned chopped tomatoes
  • salt (adjust to taste)
  • 400g of penne pasta (fresh pasta is always the best)
  • Parmasan or grana padana cheese (grated)
Preparation:

  1. Heat the olive oil in a frying pan. Add the chilli and garlic to the pan. After about a minute, add the basil leaves and gently wilt them in the flavoured oil.
  2. Add the tomatoes to the pan. Simmer for at least 10 minutes, until the sauce has thickened a little. Add salt to taste.
  3. Meanwhile, cook the pasta for a few minutes (more time needed if not fresh pasta) in large saucepan of boiling, salted water with a dash of olive oil. Drain the pasta and the tomato sauce to it. Serve with shavings of parmesan or grated cheese of choice.
 
It's not even 10 in the morning and I'm already thinking this is a good idea for lunch today :D

I'm not the biggest fan of pasta but, when made with the right sauce, it can be a delicious meal!
This recipe sounds a bit spicy for my taste though, maybe I'll skip the hot chilies or replace them with a little bit of paprika, will that work?
 
That sounds lovely - I've had chicken arrabiata panini before, but have yet to actually make the pasta it takes its name from. I love spicy food and pasta though, so I don't see how this could ever go wrong. :D Just thinking about the smell of chilli and garlic frying in olive oil is making me salivate...
 
Thats unfair Chillout, I only ate about 3 hours ago and that recipe of yours (plus Cefmac's comments about the thought of chilli and garlic frying in oil) has got me hungry all over again!
Sounds fantastic, one recipe we'll definitely be trying. I can't cook for the life of me but I know someone who can so I have a feeling Pasta Al'arribiata will be getting a mention as an idea for dinner very soon.
