Best for this recipe is "young " 12 months aged parmesan cheese, or at least no more than 24 months aged.
Pears must be sweet and firm

Easy way: remove the crust and slice the cheese, slice the pears, serve toghether.

More refined way: dice cheese and pears, parmesan quantity should be twice than the fruit.
Add finely chopped celery, season with one spoon honey and one spoon vinegar
