hello
i toured italy for the first time last month and i fall in love with italy !!!
most of all i loved the lemon granita
does anybody know how they make it in large quantities in granita shops ?
i made granita at home whith the friezing and scraping method
but i maybe want to open a granita buisness and i dont know exactly how they do it...
do they have special machins ? or in ice cream makers ??

we have these machines here but they make a very different texture than the granita they sell in italy...
im sure they make it a different way

but i dont know...
anyway thank you very much ... i hope i find a way to do it like in italy....
