Favorite Pasta Recipe?

I'm not a huge fan of pasta as it packs waaay too many calories but I do like eating it from time to time, however, I'm fairly rubbish at making it. My recipe consists of boiling the pasta dumping some olive oil on it and some cheese, so not exactly fine dining.
What good pasta recipes do you have?
 
I often cook pasta like you as well. It's easy to make! All you need are 3 minutes to throw everything in a pot with water :P Sometimes, all you need is to boil it and then add some "special sauce" on top. You can buy it at the supermarket, tomato sauce with meat, mushrooms, vegetables.... you name it! All you need to do is open the jar :P

However, like you said, pasta has way to many calories! So, I found an interesting solution to this problem :)
My favorite pasta dishes (that I make myself) are pasta with veggies. I simply replace some pasta by adding veggies.
The combinations I like most are pasta with broccoli or with zucchini.

You simply boil the pasta (less than usual, a handful of pasta is enough) and, separately, you cook the veggies. If it's broccoli, boil them first for a few minutes, then stir fry them in a pan with some garlic and olive oil. If it's zucchini, I grate them directly in a pan and stir fry them with garlic and olive oil.
Add the boiled pasta in your pan, mix everything and, for one last touch, add some grated cheese to the "mixture".

It's yummy and it definitely has less calories :D

It's an interesting idea and it seems to be much faster and you're left with some water you can use to make some sauce.
 
My favorite basic pasta recipe, is making whatever pasta is on hand, and eat it with my poor mans "rose" sauce. I just combine marinara sauce with ranch dressing and mix it with the pasta. You can also chop up veggies or cook meats and chop them up and mix it all together. Pasta is nice and versatile, so you can do pretty much anything with it.
 
Well, my favorite pasta recipe is not the one I make the most -- since what I usually make is a mix of veggies inside a sauce etc -- but it is absolutely delicious. Comes from Coup de Pouce, a magazine my mom loves.

You just put some halved cherry or grape tomatoes in the oven with some garlic, chili flakes, basilico and rosemary, olive oil and balsamico vinegar. You cook up to the moment that the skin of the tomatoes start to wrinkle. In the meantime, you cook some spaghetti, or spaghettini or angel's hair. When the pasta is ready and when the tomatoes are ready, you put the cooked pasta in the tomato tray and mix. Add goat cheese and olives (I don't add olives because I don't like them).
There's something completely amazing and irresistable to roasted garlic and cherry tomatoes. Also, I love goat cheese.

But if you wonder about how to make any pasta dish healthier -- they actually sell whole grain pasta, or even spinach pasta. I had friends who actually made pasta out of zucchini, you might want to check that up.
 
I am a big fan of Chicken Parmigiana. Who doesn't love chicken smothered in a succulent tomato sauce and mozzarella cheese? This dish always goes well with a nice salad and bread sticks. My family loves when I make this dish. There are never any leftovers.
 
I think it's more about the sauce than a recipe and whether you want a cream one, tomato based one or an oil based sauce. I like to mix them and have a creamy tomato one or an oily tomato one, but I like simple pasta dishes and opt for a pesto sauce or an oil based one as creamy ones tend to be too heavy for me. Once you have a good sauce you can add any ingredients to it.
 
I have been a vegetarian for over 20 years, and I have been experimenting with different types of pasta and organic, vegetarian sauces. My favorite pasta consists of buckwheat noodles with avocado and mushrooms, and a delicious sauce made with sun-ripened tomatoes, basil, lemon, black olives, olive oil... and so much more. It's not exactly traditionally Italian, but it tastes like heaven. :)

I agree with you there when you say it packs too many calories. I've been a calorie counter for 7 years, so I try to steer clear of pasta since it's not totally my favorite anyways and it is so calorie dense. If I had to choose, I would say my favorite pasta dish is just plain old tortellini with some butter and Parmesan cheese. I love tortellini when it is cooked al dente, and filled with a soft cheese inside. I have it at least once a week since it's such an easy dish and it can be prepared so quickly.
 
I absolutely love pasta, and I make it a lot. Since I'm vegetarian, pasta can be a really good, simple filling. I generally like a relatively simple tomato sauce, but sometimes I like to have it with mushrooms, peppers and olives. Pesto pasta is also something I absolutely love - it's so simple, but tastes so delicious!
 
My favourite pasta recipe is the pasta with ragu. The ragu is basically a really good tasting sauce made of chopped meat. It's simply delicious with a little of bit of oil. Also the "pasta alla carbonara" is also really delightful.
