Dishes For The Summer?

Since the summer has begun our oven has been neglected and been used maybe once or twice. There is no need to bring any additional heat to our kitchen in this season!

We have been eating a lot of pasta and rice salads, burrata with cherry tomatoes and vitello tonnato from the farmers market. Lately a lot of 'dishes' are repeating themselves.

What are you cooking this summer and any recipes for this season?
 
Pretty much the same as you. Lots of cold pasta and salad.

Frisella is also a good choice as they are nice and fresh. (with some Mozzarella, cherry tomatoes, etc..)

Lots of icecream, macedonia and watermelon.
Pinzimonio with carrot, fennel and root celery.
Cold whole grain or corn pasta.
Minted fava puree.
 
I'm trying to do as little cooking as possible - plenty of salads are on the menu at our house!

Lots of caprese salads - fresh mozzarella, with home grown basil and cherry tomatoes from our garden have been on high rotation. To me they are just one of the most summery dishes, I could eat it for every meal almost!

Also with the abundance of basil we have growing, I made some home made pesto which was delicious - so much nicer than store bought!

I never heard or seen Frisella around so far, eventhough we have a Pugliese bakery down the road. Is it like a bread? Used for sandwiches?
Our Pugliese bakery does a lot of Foccacia, so we have also been eating that A LOT, especially on our days out and away :)

I would love to use our basil, but we seem to have an aphid problem in the area, they keep on eating my basil whatever I seem to do about it. :( :eek:

We actually had a similar problem a while back, and I researched online how to solve it - they said to put aluminium foil around the base of the plant. It sounds a little weird, I know -- I assume it has something to do with any aphids/insects then being unable to get up to the leaves, but it's worked for us!

I never heard about this! I tried spraying with water and various mixtures, however it didn't seem to bother them enough to make them leave.
Do you wrap the aluminium foil on the plant directly or kind of on the ground? I'll definitely give it a try!

This picture is like what we did - just around the base part but still touching the ground! Hopefully it helps you out and keeps the pesky aphids away!

Caprese salad! There is nothing I love more during summer than caprese salad. Also, watermelon is wonderful in summer. It's one of the most cooling fruits, and it's something I would definitely recommend during the summer months.

And of course, it's summer, so stock up on ice-cream!
 
I like to make a lot of salads in the summer, using more than just lettuce. I make string bean salads, bean salads, cucumber and tomato salads. Anything that tastes good together cold I will throw in a bowl with some olive oil and vinegar. I also do a lot of grilling in the summer. Grilling vegetables is my favorite way of cooking them.
 
An Italian frittata is a delicious and easy to make egg dish. Use leftover pasta, add some more ingredients, make it with or without sauce. Make this for brunch, lunch, or dinner, and cut into sizable wedges. Some people take it to work to eat for their lunch:

Another good recipe is using cannelloni beans to make a bean spread. You throw the beans, olive oil, lemon juice and a little salt and pepper in a food processor. It has a similar texture to hummus but about half the calories. Its great to dip veggies or crackers in.
