I was talking to my uncle yesterday, and he told me about a simple dish he would sometimes get on the side of a meal when he was in Italy. He told me it was pretty much just cannellini beans and garlic in oil. It was extremely simple, but one of his favorite foods to snack on while he was there. Personally I love cannellini beans, and would like to try it, but he said he wasn't able to replicate it quite the way he had it in Italy. Does anyone have any insight into how this dish is usually prepared? Do you soak the beans? Are canned beans ok? Do you cook the beans in any way?
